St. Patrick’s Day is considered by many to be a day of luck and good fortune. Many took to baking and cooking as a sort of comfort and therapy.
Bread became the baker’s choice. Variations of sourdough bread, cheesy bread, cornbread, homemade bagels, and even the elusive baguette challenged home cooks everywhere.

Why Is It Called Soda Bread?
Most breads use yeast as a leavening agent. Irish soda bread relies on baking soda rather than yeast. The baking soda reacts with the acid in the buttermilk which causes the bread to rise. Therefore, Irish soda bread gets its name from baking soda!
Why baking soda? In the climate of Ireland only soft wheat could grow. When mixed with yeast, this soft wheat would not form any gluten. However, it works great with baking soda! This made it the perfect everyday, easy and inexpensive bread to make all year round!
